Parmesan Meatballs
Ingredients:
2 pounds ground meat
1 package Italian dressing mix
1 tablespoon garlic powder
1 teaspoon onion powder
1 egg
1 cup bread crumbs
1/2 cup grated parmesan (powdered kind in the green jar)
salt and pepper
olive oil
1/2 yellow onion, finely chopped
To make:
- In a large mixing bowl, break up meat into small chunks.
- Add salt, pepper, garlic and onion powder, Italian dressing mix, and the parmesan.
- With hands, mix thoroughly.
- Form into balls the size of golf balls.
- In a large skillet, heat some olive oil (just enough to cover bottom of pan.)
- Throw in the onion and a little salt.
- Brown the meatballs on all sides.
- Remove from pan and place directly into pot of bubbling pasta sauce to finish cooking. (The inside may still be a bit raw, and that’s okay.) Cook in sauce for 15 to 20 minutes.
- Ladle meatballs and sauce over fresh, al dente pasta, topped with freshly grated parmesan cheese. Serve with salad.
Recipe feeds 4 adults and a bunch of boys.
(And I suppose girls, too, but I can’t be sure.)

Made these tonight. First batch of meatballs were not good. Feel apart and so I ended up just bakiing them. I think they will be really good on a pizza! Second batch was great.
Hey Leslie. What did you do differently on the second batch? I thought mine were going to fall apart, too, but they didn’t.
Made these tonight! I don’t like meat sauce, and I’m not a huge meatball fan… but I loved these! So did everyone else!
Kassi, I’m the same way about meat, except when I’m pregnant. These are so good to me right now.

I’m feeling great! Hardly any sickness, and the exhaustion has left for the most part.. except when it’s quiet, then I could nap.

Yes, I’m not a meat lover.. but pregnancy brings out the meat lover in me. It makes sense though.. I totally believe when we crave things our body needs it. Except for dr. pepper, I haven’t come up with an excuse for that one, yet..
