More Soup Recipes!

Yesterday, I shared some of our family favorite soups, and today I brought 3 more!
Today’s Soup Du Jour’s are:
Amish Cheeseburger Soup, Hearty Vegetable Hamburger Soup & last but definitely not least, Crock Pot Kraut & Bean soup. (No wrinkling your nose, it is seriously the BEST SOUP EVER!)
First up:

AMISH CHEESEBURGER SOUP

Amish Cheeseburger Soup

Ingredients
  • 1 pound Ground Beef
  • 8 Tablespoons Butter, Divided
  • 1-½ cup Carrots, Sliced or Roughly Chopped
  • 1-½ cup Celery, Sliced
  • 1 whole Small Onion Chopped
  • Fresh Parsley, Snipped
  • Basil, To Taste
  • 6 cups Chicken Broth
  • 8 cups Peeled And Cubed Potatoes
  • ½ cups Flour
  • 3 cups Milk
  • Salt And Pepper, to taste
  • 16 ounces, weight Velveeta
  • 16 ounces, weight Sour Cream

In a skillet, cook ground beef and set aside. In a large stockpot, melt 2 tablespoons butter and saute carrots, celery, onion, parsley and basil. After 10 minutes, add the chicken broth and potatoes, reduce heat to a simmer and cook until potatoes are tender.
In a saucepan, make your roux by melting the remaining butter. Add flour, salt and pepper to taste, and cook until bubbly, about a minute. Slowly, add milk and cook on medium, stirring constantly until thickened. Add to the broth and veggies. Turn the heat to low and add the cheese and beef. When the cheese is melted, stir in the sour cream. Taste and add more seasonings according to your liking.

This next recipe comes from my best friend’s momma. I am not normally a big veggie soup fan, but when I heard it had 2 cans of tomato soup in it, it peaked my curiosity! It didn’t disappoint and the whole family DEVOURED IT!
Plus, how can you go wrong when it contains a WHOLE stick of butter?!?!?! 🙂

HEARTY VEGETABLE HAMBURGER SOUP

Hearty Hamburger veggie soup

Ingredients

  • 1 stick Butter
  • 1 quart Water
  • 1 whole Medium Onion, Chopped
  • 2 cups cubed Potatoes
  • 2 cans Tomato Soup
  • 1 teaspoon Pepper
  • 1 cup Flour
  • 2 pounds Ground Beef
  • 1 cup Celery, Chopped
  • 2 cups Mixed Veggies Or 1 Cup Corn, 1 Cup Green Beans
  • 1 cube Beef Bouillon

In a saucepan, melt butter and make a smooth paste with 1 cup flour. Add water. In your soup pot, brown meat and drain. Add paste and remaining ingredients. Simmer on low for several hours.
This soup has incredible flavor!!!! You will love it!
*Your soup will not be as thick as pictured, until day 2. Next time I will add more liquid before serving leftover soup.

And last, but totally not least……

CROCK POT KRAUT & BEAN SOUP

Saurkraut soup (2)

  • 4 cups Diced Raw Unpeeled Potatoes
  • 3 cans (14 Oz Each) Sauerkraut, Un-drained
  • 1 cup Water (I Added A Half Cup More Because Mine Was Too Thick)
  • 2 packages Kielbasa Sausage, Halved And Sliced
  • 2 cans (15 Oz Each) Northern Beans, Pour Off Top Liquid Only
  • 2 cans (15 Oz Each) Pork And Beans, Un-drained
  • 4 Tablespoons Brown Sugar
  • 2 Tablespoons Dill Weed (I Did A Bit More, Yum!)

In an 8 Qt. crock pot layer potatoes, sauerkraut, water, kielbasa, then beans. Sprinkle brown sugar and dill weed over all.
Cover, cook on high for 3-4 hours, or until potatoes are soft. Make sure you stir a few times during cooking, adding another 1/2 cup water as needed if it appears too thick.
Oh my word, this is seriously my new FAVORITE soup! It was so sweet & savory, big enough to feed a crowd and is OH SO GOOD!
{Can be easily halved and put into a small 4 Qt crock pot as well.}
Pretty please with sauerkraut on top will you try this?
Be BRAVE! Make the Kraut soup, you will be shocked how good it is!

  1. Oh yeh! I’ve made the last 2 soups, and am making the first one for dinner tonight. I can testify to the YUMMMMM-yness of Tonya’s creations! The burger soup is a favorite too.

  2. been wanting to try this since it was first posted! FINALLY got it in the crock pot for tonight!! hubby and i are excited! 🙂
