Mini Pizzas {Easy Lunch}

The boys and I love this quick, easy, and healthy lunch!

Just a few simple ingredients, and in minutes, we have a hot lunch on the table.

  • whole wheat English muffins
  • organic tomato sauce
  • fresh garlic (optional)
  • fresh, grated mozzarella cheese

Simply place sauce with freshly minced garlic, a dash of salt and pepper on each muffin half, then pile on cheese and broil.

It doesn’t get any easier than that!

These make a great lunch, or a fun appetizer!

  1. My mom made these all the time when we were home schooled as kids. She eventually started making her own English muffin bread in the bread machine because we ate it so much.

    I do this sometimes too, but usually use toasted wheat bread or homemade wheat rolls cut in half, because English muffins aren’t really available here.

  2. These do look good! And the garlic in there has amazing healing powers! This seems like it may be a great way to get raw garlic in the boys.

  3. These look great! I do the same thing often with whole wheat tortillas. We love them! I will have to give them a try with english muffins.

  5. Just wondering… with 7 boys… how many of these do you make and how many do they eat???

    Just trying to see how my life would look like with 7 children. I got 4 right now and at lunch time it feels like all I do is make sandwiches. My kids eat a lot. They are always full of energy… constantly moving. šŸ™‚

    • I use an entire package of whole wheat english muffins to make the pizzas. If I eat with them, which I normally do, it isn’t enough for lunch. But we have other things like fruits and veggies, so it works for now. When they’re all big, it definitely won’t be worth my time to make mini pizzas….we’ll have to move on to just big ol’ pizzas. šŸ™‚
