Menu Plan 3/17/14

Another Monday has arrived, and after a wonderful Spring Break, we’re back to the books this week.  And of course, I am back to menu planning!

Can I just tell you that I love routine?  Not so much a hard schedule, but routine…predictability…I like it.  Menu planning helps me avoid the dreaded “what are we going to eat” crisis at 5:00 every day.  It helps me get all my shopping done in one trip.  And it keeps our spending down because we’re making less trips, too.

Over the years, I’ve tried two week menu plans, but that is TOO much planning ahead for me.  We might change our mind about what we want.  Or we might need a pot of chicken soup if someone’s feeling yucky.  Or we might run out of certain items needed for whatever reason.  So a one week menu plan works best, especially for this large family.

Here’s what we’re cooking this week:

Banana Muffins |

Homemade Hummus ::

Mexican Chicken and Black Bean Soup for the Slow Cooker

Crispy Chocolate Chip Granola Bars

Pumpkin Cake Loaf |

What’s on your menu this week?

    Looks great!! What is your budgey?Is any of this done ahead with freezer cooking? Looks like you do most things homemade which I love!

    • Oh, Jennifer. Our budget is scary. We spend about $1600 per month on groceries, and about 75% of that is all from Costco. I buy almost everything in bulk there. Since I don’t always grind my wheat, I do buy 20 pounds of organic flour there, and the 10 pound bag of sugar. I also buy all my local honey, organic maple syrup, organic olive oil, organic eggs and milk, and six pounds of cheddar every two weeks there. Also on the list are organic pasta, organic tomato sauce, diced tomatoes, and recently their organic pasta sacue (just because it makes an easy, cheap meal!) I need to write a post about all the things I buy from there. It just saves me so much time and work to have all the things ahead of time. For instance, right now I could make a dozen freezer meals just from food I have on hand. I like to do freezer cooking ever so often, on Saturdays of course, or occasionally, I will just double or triple our batch for dinner and freeze then. I love homemade food for my family. I love cooking for them. It’s my absolute joy! 🙂

        Thank you so much for your reply! Dont be too hard on yourself- you are feeding 10 mouths and buying organic so id say your not doing too bad! I know one blogger that doesn’t even say her budget because there is no right or wrong- its what works for your family. I also get so much joy out of cooking for our little family (its just me, my husband, and our 2 year old son). Since you’re from Texas, do you tend to include a lot of southern meals, or do you all like a little bit of everything?

  2. I try to keep up with your blog but feel like I missed something, what free eBook? I love All your recipes, so I don’t want to miss something!! Thanks!
