It’s one of our favorite dinners. And I admit, it’s probably my most favorite for fitting into the easy, healthy AND delicious categories.
I love making our own hummus and pita bread. And it doesn’t get any easier than slicing up your favorite color bell peppers and pulling a bag of baby carrots out of the fridge. And that’s it. Dinner!
Yesterday, I got adventurous and decided to put to use some of the sun-dried tomatoes that I got this past weekend. I simply made a regular batch of hummus, then poured half of it into a bowl, leaving the rest in the food processor, and added in four whole sun-dried tomatoes. Pulsed til I could still see small chunks of tomato. It has a deeper, richer flavor that it’s plain version. The boys and I liked both.

Where do you get tahini? Dumb question, I know, but I have never heard of it until now. I do know what it is because I googled it!

Hey Tara! You can find tahini at Sprouts and Whole Foods. Maybe Kroger, too. I actually got my last jar at a Greek restaurant and it is yummy. Have a blessed day! ~Brandy
