Garlic Lemon Chicken and Pasta |

This is one of those easy, healthy, versatile, one-pot dishes that you can whip up quickly.

Wait.  I just said everything I needed to say in that one sentence……

Okay, so it’s easy because you just throw boiled noodles, raw veggies, olive oil and chicken in a pot and you’ve got dinner.

Healthy because, well, you read the ingredients.

It’s versatile because you can modify this recipe to fit ANY need of your family.  Make more.  Make less.  Make it with peppers.  Or use mushrooms and tomatoes.  Or use squash.  Use rotini pasta or plain old spaghetti noodles.  It doesn’t matter.  None.  Not one bit.

I broiled my chicken, then sliced it into fajita slices…..but it would be great pulled, too.

I used red, orange, and yellow bell peppers, raw spinach, and sun-dried tomatoes.

Oh. My. Word.

This is how I like to eat.


  1. Ooo…we love these types of dishes. We do one with Penne, Sugar Snap Peas and Petite Carrots…and grilled chicken. And we do one called Squash Pasta….with Bow Ties, yellow and zucchini squash, match stick carrots, and mushrooms….with smoked sausage. Both topped with freshly grated Parm.

    Am SO trying this one! Thanks!

    Very good recipe, thank you for sharing!! So easy to make and all of the ingredients I keep on hand. I added feta and kalamata olives when served, because well I’m Greek and I love them, lol. Thanks again for another great recipe!!

  4. I tried this tonight and my family loved it! Thanks for the recipe! We also added zucchini and chopped onions to the veggies and used fresh tomatoes instead of sun-dried because that’s what I had. Also added some lemon juice to the final product. Yum!
