The other day, when I made these and posted a picture of them on Instagram, I called them chocolate sugar cookies. Because that’s basically what they are.
But they’re crunchier and simpler than a sugar cookie, so wafers, they are.
Inspired by the little organic chocolate bunny grahams that I sometimes buy for our little guys, these things are close! Simple, fun to make, and with the added benefit of being able to draw funny faces and smiley faces on them before baking, what’s not to love?
Here’s the recipe that makes about the amount you’d find in two store-bought boxes. Feel free to bump up the cocoa powder and/or sugar a wee bit if you prefer more chocolate and more sweetness.
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter
- 1/3 cup cocoa powder
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 2 1/2 cups flour
- Preheat oven to 375.
- Mix all ingredients except flour and baking powder.
- Add flour and baking powder.
- Mix thoroughly.
- Roll out cookies onto surface dusted with cocoa powder.
- Cut out shapes.
- Place on baking stone or sheet and bake for at least 7 minutes until cookies begin to crisp slightly. Let cool for a two minutes, then place cookies on cooling rack.
