Chocolate Coconut Granola Bars

One day when I was making cherry pecan granola bars, Levi (who just turned five) requested that we make granola bars his way.

“No problem,” I said, and went to work, following my son’s lead as he suggested his favorite ingredients.

Now, these look quite similar to the chocolate granola bars (which are Hayden’s favorite), but if you take a closer look at the ingredient list, they are heavier on the oats and chocolate, and contain no peanut butter.

The result?Ā  Well, Levi’s own recipe, which happens to be his favorite granola bar now, of course!

    We love your granola bars! This one sounds delicious and I would love to make it with a Nutella-like product. Nutella contains vanillin, a chemical that is natural because it can be made from the waste of tree processing plants or the anal glands from beavers. Many people couldn’t care less, which is totally fine, but for people who are avoiding stuff like that, it’s great to have options. Thanks for always sharing your recipes…

    We buy Justin’s Chocolate Almond Butter. It’s amazing! They also have a hazelnut flavor.It’s all natural too! The Chocolate Almond one has 7 simple ingredients and most are organic. šŸ™‚ Dry roasted almonds is the first ingredient unlike Nutella which is sugar, I believe.

    • Where do you get Justin’s Chocolate Almond Butter? A store like Whole Foods (in Winston Salem NC) or the local grocery store? It sounds heavenly!

    We are using these recipes in our school kitchen! Although most of the sweeteners are cut just a bit. Our students at the Jr/Sr high school LOVE THEM!!!

    You will most likely find it at Whole Foods store or the like. I have a Super Target by my house and they sell it there as well. šŸ™‚ It’s very yummy!

  6. I love your granola bars! I used Organic Chocolate Hazelnut Butter instead of nutella. I also added some wheat germ and chia seeds for more yummy healthiness šŸ™‚
    Question — mine always seem to come out soft. I’ll stick them in the freezer to harden, but then they soften up and break when I put them in the fridge or take them on the go. Do yours come out this way too? Any suggestions?
