One day when I was making cherry pecan granola bars, Levi (who just turned five) requested that we make granola bars his way.
“No problem,” I said, and went to work, following my son’s lead as he suggested his favorite ingredients.
Now, these look quite similar to the chocolate granola bars (which are Hayden’s favorite), but if you take a closer look at the ingredient list, they are heavier on the oats and chocolate, and contain no peanut butter.
The result? Well, Levi’s own recipe, which happens to be his favorite granola bar now, of course!
Chocolate Coconut Granola Bars
- 1/4 cup coconut oil
- 1/3 cup local honey
- 1/2 cup Nutella
- 1/4 cup cocoa powder
- 1/4 cup ground flaxseed
- 1 1/2 cups oats
- 1/2 cup shredded coconut
- Melt coconut oil, honey, and Nutella together in small saucepan over low heat, stirring constantly.
- Remove from heat, and add remaining ingredients.
- Stir til well blended.
- Spread evenly in 8×8 parchment paper lined pan.
- Chill til set.
- Flip out of pan and cut into bars.
