I’m a granola bar junkie. I admit it.
If you don’t believe me, just take a look at the short list I’ve been compiling over the past year or so of my favorite homemade, healthy versions of the granola bar:
See? It appears I have a mild addiction, doesn’t it?
Seriously, granola is a very good thing. Super easy to whip up, and great for keeping on hand for growing little ones.
Here’s the latest.
Chocolate Chip Peanut Granola Bars
Ingredients:
- 1/2 cup natural peanut butter
- 1/3 cup local honey
- 1/4 cup coconut oil
- 1 1/2 cups oats
- 1 1/2 Tablespoons wheat germ
- 1/2 cup ground flax seed
- 1/4 cup peanuts
- 1/4 cup chocolate chips
Steps:
- Melt peanut butter, honey, and coconut oil together in a small sauce pan over low/medium heat, stirring constantly. It only takes a minute or two to melt.
- In mixing bowl, combine all other ingredients except for chocolate chips, and stir well.
- Pour liquid mixture over dry mixture and stir til well combined.
- Let cool in bowl for several minutes.
- Place mixture into foil lined 8×8 pan and press down firmly.
- Sprinkle chocolate chips over top and press down firmly with hands.
- Place in fridge or freezer to set.
- Flip the foil out onto cutting board and cut into desired bar sizes. I like to cut a dozen rectangle shaped bars.
- Store in fridge for best results.












These sound amazing! Our family has to eat gluten free so I would have to leave out the wheat germ but otherwise I am so excited to try these for my always hungry toddlers! Seriously, I haven’t allowed them to but I have a theory that they would be happy if I let them eat around the clock!

This looks great!! I love peanut butter AND chocolate chips, so I doubt my little preschooler will get his hands on these!!
Hi can I use another oil instead of coconut oil?
Unsalted butter will work….
I made these tonight. Super yummy! I made a few tweaks to the recipe. First, instead of peanuts, I used almonds and cashews. I chopped them up and actually added 1/4 cup of both (we love nuts!!). I swapped unsalted butter for the coconut oil (since I did not have that on hand). And instead os 1/4c chocolate chips, I used 1/8c chocolate chips and 1/8c peanut butter chips. My kids LOVED them!!
I just made these… sooo good! I used natural unsalted crunchy peanut butter, almonds instead of peanuts, and left the wheat germ out (didnt have any). I also added a dash of cinnamon. I don’t think the kids will get any of these
I am loving the aroma in my house right now! The bars are cooling in the fridge and I cannot wait to try them. We added a little extra peanut butter and used some extra chunky peanut butter as well. Also added slivered almonds. I didn’t have any wheat germ but I used wheat bran instead. I hope they are moist enough. Thanks so much for posting such a yummy treat. My husband who is at sea in the Coast Guard will be receiving a dozen very soon!
Sounds FABULOUS! Do you use quick oats or old fashioned? Do the oats “cook” with the hot liquid?

First of all, this is amazing. Thank you for sharing. I am about to make them for what will be our fourth time in probably three weeks… so yummy! One change we made is taking out nuts (only because I don’t have them on hand) and adding dried cranberries as a topping, sprinkled on with the chocolate chips. So yummy! Adds a bit of fruitiness!
I just want to tell you that I found your recipes via pinterest and I’ve made the granola bars a gazillion times. We call them Crack Bars in our house since they’re so addicting! haha. Thanks for some great recipes!
