Blueberry Breakfast Cake

I found this recipe on Pinterest and it’s one of my favorites now!Ā  I adapted the recipe from this one and it’s so good!!Ā  We already loved blueberry muffins, and this is delicious, too!

And who doesn’t love cake for breakfast!?!

  2. Have you tried making it with less sugar? If so does it still taste good? Because a whole cup of sugar sounds like a lot to me.

    • I haven’t tried it with less sugar….It’s more of a treat for us, so we don’t make it too often. šŸ˜‰

    I made this breakfast treat at 10pm last night. I had to be at church early this morning, so didn’t have much time to mess with doing it then. Anyway, I realized I was short on frozen blueberries so I substituted the rest with frozen black berries (1/2 cup blueberries and 1 1/2 cups black berries to be exact). Also, I added in some ground flax seed (plus water) to the mix to help on the healthy end of it šŸ˜‰ Can’t tell the flax seed is in it, and the black berries are equally as good as the blueberries! Thanks for sharing!

    I’ve been eyeing this for a while, your version is easier so decided to try it. SO SO amazing. I put it in an 8×8 pan and put more buttermilk in it. Definitely a favorite!

  7. If you use fresh blueberries, freeze a handful of the measured quantity needed for the recipe to add back into the batter and you will enjoy intact berries in the finished product. Also, I read once that dessert/cookie recipes can tolerate 1/2c reduction in sugar without ruining the outcome and have not been disappointed in the flavor. Of course, if a recipe only calls for a 1/2 c sugar, you won’t want to remove the entire amount, so keep the sugar reductions relative to the dry ingredients called for in the mix for best results.

  8. I felt so guilty about making this for breakfast so I used whole wheat pastry flour and reduced the sugar. I love simple ingredient recipes. Thank you!
