Baked Sweet Potato Chips

Sweet potatoes are an excellent source of beta-carotene, and there’s no quicker way to get (some of) my eight boys to eat them than this!

By themselves or with homemade salsa or hummus, these baked sweet potato chips are delicious! I like to think of them as a snack, but they could easily go with burgers in place of fries.

  2. Yum, I do this too! We eat them as a side dish with supper and I usually make a dipping sauce of sour cream, green onions, dill and other herbs. So good with the sweet potatoes!

    Now I am craving these…

  3. I made these today with our snack lunch and they were so yummy! I think I sliced mine too thin (my sliced has a thin or thick blade). They were pretty hard to manage and I did not even try at all to put them in a single layer. That would have take a very long time. Next time, I’ll go for the thicker slice. My 16-year old son, who does not like sweet potatoes, tried them and said they were really good! I’ll be making these again. Thanks for sharing.
